Hi! Thank's for your answer! Unfortunately not, i can't. However i found that i have to duplicate the profile and edit the new one. I think that cura doesn't want to let the user change the default value on the material profile provided by the software. If you want to change some value you have to create a custom profile from the default one. Is this the normal procedure?

i can't change the material settings too. Does anyone know how to solve?
