Had some questions about assembly.

Do I have to replace all the wood on the head? Or can I get away with just changing certain pieces (like the top and bottom).

Any tips on pulling out the old thermocouple and cartridge heater from the old aluminium block? Should I heat it up before trying to remove?

If there's anything you found to watch out for, or anything to make my life easier, please let me know.

Mhh, you _should_ at least replace all the wood on the head. Can't say if it is possible to kludge something when not doing.

For disassembling / pulling out the thermocouple and heater (and all party that get heated in use) -> it's always a good idea to warm / heat things that you need to remove, be it "slid in" or "screwed in". Ask any car mechanic :-)

Regarding to the wood, it is not necessary to change the sides of the housing.

The new wood has, i believe, 2 new small holes in it what makes it easier to guide wires from the outside with a screwdriver. If you don't want this luxury you don't have to swap them :)

The top and bottom are mandatory tho.

As for further guidelines i would like to refer to the wiki and look at the pictures.

Don't use any excessive force for anything but make sure the hot end part is tight.
