on step motor and default max speed

Dear all,

I'm a little confused on the information about E-step.

On Marlin I can find that:

1. the default steps per mm are 80,90,4000,500 for X,Y,Z, E0 respectively.

2. the default Max Feed-rates are 500,500,2.5,45 for X,Y,Z;E0, respectively.

It is not clear for me the difference between the two information.

How is possible that the default values for E-axis is greater than its maximum rate ?

Can you explain me what exactly means these two information ?
