so i was thinking, what makes the ultimaker capable of such a crazy high Z axis resolution, whereas all the other ones that are made have a much lower resolution?

or is it top ultimaker secrets :p

I'm sure other printers are capable of the same z-axis resolution as well. Z-axis resolution is the easy part. A high quality screw, a good stepper motor and a good driver with microstepping is all you need to make small increments in z.

i guess that the light weight print head design also helps a great amount.

The light print head helps to make it faster in the X and Y but doesn't really effect the Z-axis since they are two separate modules so to speak.
