I have looked into doing this on my material station and it will only load the material in as a generic PLA not a specific color are per the Ultimaker brand reels, this will not continue to print for me as the color it is requesting has not been loaded. is there any other way to select the type and color to fool the system or is the best way to keep the NFC circles in the future?

I did something similar and withdrew the end of the filament but left the roll in place. I fed the new colored filament into the material station nozzle (holding the new roll in my hand) and then the printer thought that it was the correct color. After it recognized it, I swapped the rolls.
It only performs the check once, so no need to swap labels. Just remember that it will be incorrect until you change that roll.

It's probably a bit late for your print but for the next time: simply remove the paper circle (which includes the NFC tag) from the empty spool and put it onto the spool you want to use. Make sure you remove the paper circle from that spool in advance if it is an Ultimaker material (so the printer only sees one NFC chip).
