total NOOB sorry , allignment and pla best before?

hi guys

ive been realigning this ultimaker2+ the plastic wont stick to build plate, ive done the 1mm well best as i can and the paper with light resistance the pla extrudes then stops doesnt stick to the buildplate the pla stops extruding. printer carrys on as it is printing away.the filament extruder feed is set at 100%. 

and how long does pla last i read it had a best before date type thing. pla im working with is round 7 years old.

is there any basic guides here to help me get started?
