Infill density setting greyed out

Some other setting is blocking you.  It's quite complicated.  It's easiest if you post your project file because the printer, the number of nozzles and which nozzle is assigned to which material and dozens of other settings can affect this.  So please, in cura, do "file" "save project" and post that file here.  The project file will include your model, and the machine (printer) profile, filament profiles and much more.

 

Oh - it could be that you are in "spiralize" mode which doesn't allow infill.

    Or if you've manually entered a value for Infill Line Distance that will override the density. Click the image.png.5ffe66a47296e8c4c91ff30b0934f5cb.png button next to the line distance to revert back to using a percentage.
