Ultimaker S5, with a carbon build plate - i'm trying to protect by having a cooler nozzle temp whilst levelling - would like it to be around 140 while levelling.

i had a feeling that it was problematic!
being semi novice on the gcode side what difference does griffin / marlin make?
cura 5.8 has a start code, but one i found which i thinks starts bed levelling once bed is at temp seems to make nozzle temp rocket!
this was the code.
M140 S{material_bed_temperature} ;set bed temperature
G28 ;home all axis
M190 S{material_bed_temperature} ;wait for bed temperature
M104 T0 S{material_print_temperature} ;set hotend temperature
G29 ;auto bed leveling
M109 T0 S{material_print_temperature} ;wait for hotend temperature

Thanks.
Do you know if the preheat is set by the nozzle? the CC06 is being heated to 270 even when the initial (and) print temp of the nozzle is set to 240

You will need to specify what printer this would be for or no one will have a correct answer for you
