All the beds are actually models themselves. On a Windows system they are located in the "C:\Program Files\UltiMaker Cura 5.8.0\share\cura\resources\meshes" folder.
This is the Chiron build plate in MS 3D Builder. (I colored it yellow so it's easier to see.) It's just a flat plate so you could go ahead and cut some lines into it. Cura doesn't pay any attention to cutouts in the plate. It's basically just a cartoon.
The platform for each printer is called out in the definition file. This is from yours:
"platform": "anycubic_chiron_platform.obj"
You could make changes to the platform, do a "Save As" and then change the name in that "platform" line. As long as your new file is in that "meshes" folder or better, in the "meshes" folder in your Configuration Folder, it will load.
Some people tend to go overboard on the customizing.
