After you change a quality setting, there should be a save icon at the top right of the panel. You can't change the default profiles (not easily, anyway) but once you save your custom profile, Cura will remember the last profile you used when you next create a project.

But in order to save 1 change, I have to create 11 new "custom" profiles. And I can't remove the original 11 profiles that have Brim as the default. Not very user friendly 😞
