An option is to install the Kobra 2 and change the Machine Name.  Once it is installed go into "Manage Printers" and "Machine Settings" and change the bed size and whatever else might be different.  The Kobra 2 looks to be a direct drive printer and if the Max is also a direct drive machine then the retraction settings should be OK.

In the Cura Marketplace is a plugin called "Printer Settings".  Install that.  It's handy anyway but you might need a couple of the settings that are in it.  Settings like Max Acceleration and Max Speeds come from the printer definition file.  Your firmware might be slightly different.  Cura only uses those "Max" numbers to turn input boxes red when you make an illegal entry.  If that's an issue then simply change the "Max" setting.

It is not UltiMaker's responsibility to add definitions for third party printers to Cura. These must be contributed by either the manufacturer or the community. Some manufacturers post custom profiles and instructions to install them on their website, so you could try looking for that. You could also contact them asking if they have specific instructions/subtly suggesting they actually submit a profile.

As @GregValiant points out, selecting a similar printer and changing any settings different to yours often works.

I don't know about Anycubic but some manufacturers are notorious for listing Cura as supported software when they don't even contribute profiles themselves.
