The relationship between the "Z seam alignment", "Z seam position", "Smart Hiding" and "Zseam on Vertex", and "Seam corner preference" is complex and you need to experiment with different combinations of settings to find what is best for a particular model.
There are a lot of layers on the rabbit that don't have any corners. That makes "Where to the put Zseam" tough to answer and the calculations difficult if "Zseam on vertex" happens to be chosen (there are layers with no vertexes), or if "Smart Hiding" is chosen (same problem).
With the Z seam location set to User Specified and Left, and the Corner Preference set to None and with On Vertex disabled, the Zseam goes down the backside.
The only change I made here was to enable "On Vertex" which gives a completely different result on this particular model.
Looking at this single layer - Corner Preference and Smart Hiding don't really have any meaning because there aren't any corners or vertexes to put the seam. Organic shapes tend to present this problem.

You need to play with the settings until you get as close as you can to what you want for the particular model you are slicing.
A more "mechanical" model requires a different combination of settings. It's easy to hide the Zseam on this and put it on the mounting surface where it will hidden by the part that gets attached there.

For this we'd really need to see your Cura project file (.3mf, get it set up then go to File > Save Project) so we can see all your settings. There's a lot of things that can affect seams and being able to open the project and play with the settings ourselves is often the bet way to find ones that work 🙂
