The fans are numbered according to their connection on the mainboard. Typically, that would be numbered as fan "0". The fan number is in the Machine Settings on the Extruder tab as "Cooling Fan Number". (Note that it is not "Number of cooling fans".) Unless you have changed your mainboard or firmware, you should have that setting as "0".
If you have connected your new fan to a different socket on the mainboard you will have to figure out what fan number is associated to that connection.
The syntax of the fan line is firmware specific. Typically M106 S255 will refer to the "cooling fan of the active extruder". For multi-extruder machines with separate fans for each hot end it might be "M106 S255 P0" to set the primary extruder fan to 100% speed. M106 S255 P1 might indicate the cooling fan of the second extruder. M107 is being deprecated but it will turn off the active fan as will M106 S0.
Cura doesn't support single extruder printers with multiple layer cooling fans that each have their own number.
