"Here's a list of the following issues I'm noticing.
There are 20 total probe points. People have told me that is far too many.
When leveling, it does not seem to keep the leveling I do and the probe points always change it to whatever it thinks is correct (i think.) So I have to edit the leveling during the first layer of the print.
I use a Wham Bam Flex Plate - Not sure if that's causing issues."
The number of probe points is a setting within the firmware. I think it's adjustable by sending a G29 or M420 command with the proper parameters(?) The Marlin commands are at MarlinFW.org.
Whether or not the printer remembers the Z-offset and other settings is a function of how the firmware is set up.
It doesn't matter what the bed surface is although it's preparation may differ.
