The build volume is defined in the machine settings. You might be able to cheat a little bit, but you need to be careful. The model needs to fit within your actual build volume.
Go to "Manage Printers" and then "Machine Settings". The X (width), Y(depth) and Z(height) determine the build volume. You can make those whatever you want, but the printer is only so big.
Here is the same model I used above but I've set my Ender to 3000 x 3000 x 5000. I've moved the model from the midpoint to a location 115 from the left and 115 from the bottom. I could slice and print this since it is where my actual midpoint is on the printer. If I move it just about anywhere else, the print head will slam into the end stops.

All you can really do is collapse some dialogs. (This is with Ahoebens "Sidebar GUI" so it may look a bit different than your installation.)
Under the "View" menu you can toggle "Full Screen" but all it does is hide the Titlebar.
