Did you download the new version through the links on UltiMaker's website? Some printer manufacturers have their own versions of Cura which follow the same version numbers but are modified to suit their needs (or in some cases... just cause they can).
What version were you running before?
What OS and version are you running?
Have you tried 5.7 or 5.7.2?
Did you uninstall whatever previous version you were using, either before or after installing 5.7.1?
If you didn't, does the previous version work as you expect it to?
Have you tried reinstalling?
The help popup with the graphical explanation of settings is probably the "Settings Guide" plugin available in the marketplace (but it should appear in both Prepare and Preview modes when editing the quality settings).
