is there somewhere at Ultimaker.com or in the Internet a Handbook (Linke PDF), vou can print, for Cura and / or aboubt the Ultimaker 3 Extended?

You can get the UM3 manual here: https://ultimaker.com/en/resources/23202-manuals

It's the same for UM3 and UM3E since the only difference between them is their height.

I'm not sure if they're up to date with the latest version of CURA, and I've not seen a full guide for CURA anywhere.
