I guess you have selected the AA 0.25 print core and therefore you see only the Fine profile. Check if you see more when selecting the AA 0.4 core.

    Disable Extruder 2 in Cura (via the menu) and you will see that you got all profiles back. 

     

    When there is an active/enabled extruder with 0.25 print core, then only the fine profile is shown, because the core isn't able to print other layer heights. And it doesn't matter is print core 2 is not used in your print, it is enough when it is enabled.

     

    I tried it here with my Cura, as soon as I have selected a 0.25 print core in one extruder, I only see the Fine profile.
