if you want to print a model with extruder 2 instead of extruder 1 (or vice versa), just select it in Cura and klick the desired extruder in the left side bar or in the context menu.
If you want to switch the extruders while printing one object, using dual color / dual material: you have to split the object into two different objects in your design software, load and joyn both objects in Cura and select a specific extruder for each split, as described in the attached manual:

Hi,
