If there is a profile in the Marketplace, then you can just download the profile and it should also be transferred to the printer. Otherwise, select a generic material.
Regarding 1.75mm filament: You cannot print with 1.75 filament on the S5. Bowden tubes and the print core are made for 2.85 and even when it works at the beginning you can get serious problems with it.
