If you have different size nozzles on the extruders you are really limited to the Layer Height of the smallest nozzle. When you switch extruders in Cura you should be able to set some of the other things "Per Extruder".

Some of the other settings you have highlighted (like Wall Line Width) can be set "per extruder".
