The Enterprise version is mainly for business purposes and should fit the security standard for most businesses. In this case that means more limitations on the kind of plug-ins you can side load. The enterprise also comes with an MSI that can be rolled out by most IT departments in bigger companies.
The Enterprise version receives less updates, so you will not have access to the latest improvents like the community members. In this case you'll miss out on the Variable Linewdith introduced in Cura 5.0. For that to be rolled out in enterprise you'll have to wait.

There is quite a difference between Cura Enterprise and Cura 5.1
It is included in an Essentials Subscription https://ultimaker.com/software/ultimaker-essentials
It should come with the purchase of an Ultimaker Printer or you can buy it with a reseller.
