Hey @Toddk60,
Welcome to the UltiMaker Community 🎉
I happen to know that this printer has already printer definitions contributed here
And since it's merged. it will be available with the upcoming Cura 5.8 release.
A little birdy told me that we probably only have to wait a week before the Beta is released. 🤞

UltiMaker is not responsible for adding printer profiles for third party printers to Cura. These must be contributed by either the manufacturer or the community.
In this case... as is the case with pretty much every Creality printer, they list that Cura is supported but they don't even submit printer profiles themselves (they come from the community, and are pretty much never available when the printer launches).
I'm not familiar with Creality's whole product lineup but if there is a printer similar to yours (like a slightly older model) the profile for that should work, but it might not give you ideal results. If there's a regular K1 or something, you could probably select that and just change the build volume.
