Pause option/plate level?

Is there a pause option during the 3d printing process? and if so does the bed lower when the printing process is paused?

Yes you can pause and yes the plate goes down a bit. (Assuming you are talking about Ultimakers)

Is it possible for the plate to go down completely when paused and then resume on the ultimaker?I need that function for my project.

If not are there any other desktop 3d printers whose plates fully go down when paused?

I guess that a little change to the firmware could make the Ultimaker do that

Easier would be to just use the pause plug in and manually add the z move distance for extra lowering (and back up) to the G-code. ...

gcode is very easy to edit. Just read it with your eyes and you can figure it out. Z is the up and down direction - that's mostly the only thing you need to know.
