When assembling threaded components such as a nut and bolt apply copper grease to the threads, this can prevent the components from rusting and seizing together. Copper grease can withstand temperatures of 400 C degree
Sewing machine oil: X/Y shafts sewing machine oil, do you mean also shafts from print head going to the X/Y blocks or axes where bushings moving?
Both. Just one drop for each shaft. Also try not to get any on the gears or they will splip.
Weird on the help area don't say anything about the head x/y oil. I been doing it for a year and mine works great...

For the Z screw I use a chain oil like @Dim3nsioneer said on a post

The copper grease it's for the bed x3 screw leveler.
On the um2 manual they show it with photos:
