For some reason, I've noticed that in prints generated with Cura 3.0.3 it'll do one shell, then go diagonally across the print to the opposite corner, then continue the shell. Is there any reason for this, and can it be turned off?

Please try enabling the Wall Order Optimization (in the experimental category) and see if it still does that. And, yes, pictures and/or links to the model would be very useful.
