Far from perfect for the rest of us. As a programmer of 15 years experience (retired) I've had a lot of experience with setting up default save folders with many applications. Cura - should save by default to the same place it gets the model from. I make 3D printed master molds for my home business of selling silicone molds. I have several types and sizes and if I forget to change the save folder to where the model is I have to go on a scavenger hunt to find the gcode. At the very least there should be a listing in the preferences where this option can either be set manually (ie. a default folder for ALL gcode saves) or a check box that sets the save to the model's location.

Hey, with all that experience, perhaps you could contribute to the open source Cura project and fix this. Should be easy for you, right?

If your folders are always the same, put a shortcut for each one in the 3 different folders.
So with one doubble click you jump in the right place !!!

@JCD that is almost the perfect solution.
Only problem is I always have my folders arranged in 'date modified' order so that the most recent files are always at the top.
Maybe I need to run a small script when staring the pc that recreates those shortcuts, so they always near the top of the list.
Update : solved the position issue : changed the system time to year 2099 and then created the shortcuts. Then changed system time back to internet sync time. Now the file have a timestamp of 81 years from now, so hope at 135 years old, I'll be able to remember why they suddenly move position in the list.
