What we are doing for years is to insert a breakpoint into our queue.
The breakpoint is just a sliced part with for us unreasonable printcore/material settings.
One the first core it wants a AA 0.25 with Black Nylon, on the other a BB 0.8 with transparent Nylon. We have none of the printcores or materials, so it won't be printed. On top, the printer will give a warning if you load nylon into a BB 0.8 core.
Like I said, we are using it for years like this, works perfectly.
Here comes Cura 5.9 and in this stable release we have lots of material and printer profiles for UltiMaker printers, including the newly released Sketch Sprint. Additionally, scarf seams have been introduced alongside even more print settings and improvements. Check out the rest of this article to find out the details on all of that and more
We are happy to announce the next evolution in the UltiMaker 3D printer lineup: the UltiMaker Factor 4 industrial-grade 3D printer, designed to take manufacturing to new levels of efficiency and reliability. Factor 4 is an end-to-end 3D printing solution for light industrial applications

I totally agree to you that Ultimaker should do this. As a workaround we do the following on our Ultimaker 3 (my comment cited in thread: https://community.ultimaker.com/topic/38519-pause-print-queue/#comment-297968)

You can set the printer to "not available", is that not an option?
