With Simplify3D, it's possible to manually add and remove supports. Is that possible in Cura?

I can't find it too, it's very useful in Simplify3D, because some times you want to remove some support and add other manually.

It's not so easy as in S3D (yet) but yes you can manipulate supports.

You need to use a support mesh.

also nice (infill mesh);
