Maybe try a different USB stick.
Or try to download it again and check if the file is still in that format. Mac Safari tries sometimes to unpack the downloaded file automatically and then it is maybe just a .tar instead of tar.gz
Network install from the printer is no option?

Unfortunately I can not connect the printer to internet due to our local network
security configurations!
Can it be done from a PC to the printer?

Just checked, the files are rootfs-5.1.7.20181023.tar.xz and
rootfs-5.1.7.20181023.tar.xz.sig
Is there a download site for downloading the current and maybe older versions,
just in case of??

The URL from Smithy is the same one that the printer accesses when it's downloaded through the network, so it should work. Additionally, could you try to download these files through another browser?

Thank for helping me with this, I just re-formatted the USB-stick just in case and
downloaded the files again with Iexplorer instead of Chrome.
Now it has installed ok.
Hopefully now it works even better!!
