All our networks run on 5GHz, so this is not the case, and it's not that it won't connect, I can't even see our network on the list, but as I say that network (AC105) connect perfectly fine via smartphone and laptop, it's just whilst going through the Ultimaker setup
Like mentioned above, the Ultimaker printers only work on the 2.4GHz band. Trying to connect the printer to a 5GHz network will never succeed.
Most likely your guest network is at 2.4GHz. Most routers that support 5GHz, also can be configured to grant access at 2.4GHz.
So, is this you saying that we would need to check something on the configuration side?
Yes, you need a 2.4 GHz wifi to connect the printer.

If your AC105 is really 2.4 GHz and not only the AC100, then something else is different between these wifi networks.
Have you tried to enter manually the AC105 network?

I have managed to get it to connect to AC105, it happened to show up on the list this morning and connect.
However, I cannot get onto the Digital Factory. I cannot add the printer. When I hit connect on the machine it just whirls for like a millisecond and just keeps glitching? Is this a machine fault?

I still think you have Wi-Fi network connection problems.
A thought came up: When you setup the S5 for WiFi connection, did you select the correct country settings? And the same for your WiFi router? These settings should be equal in both devices as the allowed frequencies differ for many countries. Selecting different settings in the two devices will result in instable network connections (and is illegal).
To exclude wireless network problems, temporarily use an ethernet cable.

The Ultimaker S5 is only compatible with 2.4 GHz.
Maybe your guest wifi is on 2.4 GHz which is a common practice.
